Smoothie of the Month: Silken Strawberry Whip

Moisturize your skin from the inside out. This light, creamy smoothie is a blessing for both your complexion and your taste buds.

Besides moisturizing, toning, and protecting your skin, these fruits are also excellent for lowering cholesterol and strengthening your blood. Natural oils from the rich avocado nourish your body and help conditions like eczema, dandruff, and stiff joints. Rich in lecithin, avocado also supports brain function and circulation. All of these fruits are great sources of potassium, which is sometimes known as the “youth mineral”.

Soup of the Week: Oven-Roasted Vegetable Soup

Here’s a rustic and richly flavored soup that makes the most of oven-roasted vegetables. I came up with it one evening when I tossed whatever vegetables I had into a big roasting pan and seasoned them with simple dried spices and balsamic vinegar. When they came out of the oven, caramelized and saturated with flavor, I partially blended them into this easy soup.

Tips/Variations 

Garnish possibilities:
Dress up your soup with fresh aromatic fennel greens, crumbled feta, or dollops of creamy goat cheese.

Vary the veggies and seasonings:
Swap yam for potato, broccoli for cauliflower, carrot for parsnip, or celeriac for celery. Instead of tarragon, you can also season with thyme, rosemary, or Italian seasoning.

Soup of the Week: Easy Indian Curry

It’s hard to go wrong with this simply and sumptuous curry. Just be discriminating in choosing your curry powder. Some curry powders from the Far East use too much fenugreek, making a dish bitter and even unpleasant. The perfect curry has balanced flavors and isn’t dominated by any one, least of all the bitter flavor. Many curry powders from India and Pakistan are safe bets, especially a nice madras.

Mango Pudding

Two blocks from our house, there’s a local fruit stand that sells the most luscious mangoes I’ve ever tasted. From late May to September- a time my daughters refer to as Mango-Fest- we buy them nearly every day to make this dreamy pudding for dessert.
