Mexican Bean Salad - Wai Lana Recipe

Ingredients

1⁄2 c
Onion or green onion, finely diced

Medium green bell pepper, diced
1 c
low-fat sour cream
1 c
Non-fat yogurt
1⁄4 c
Ketchup
1⁄8 tspn
Mild chili powder or...
1⁄4 tspn
Cajun seasoning
1 tspn
Mexican seasoning
1 1⁄2 tspn
salt, or to taste
2 1⁄2 c
Cooked red beans

Large firm tomatoes, chopped
1  
Large head of lettuce, chopped into bite-size pieces
14 oz
Package of corn chips, crushed into bite-size pieces

Instructions

  1. In a large bowl, mix the first 8 ingredients together. Add the beans and tomatoes and toss gently to combine. Chill until ready to serve.
  2. Just before serving, toss the bean mixture with the chopped lettuce and crushed corn chips. Serve immediately.
