This mildly spiced paté is a wonderful spread that the whole family will enjoy.

2 TbspOnion, minced
1/4 cTomato, chopped
12 ozFirm silken tofu, mashed slightly
2 TbspFresh chives, chopped
1/2 tspnCajun seasoning or mild chili powder
1/4 tspnSalt, or to taste
1/4 tspnBlack pepper, or to taste
1/2 cCheese of choice, finely grated
1 TbspNutritional yeast
1 clvMedium clove garlic
1 tspnMilk or water if necessary
- Melt the butter in a nonstick skillet on medium heat. Add the onion and tomato and sauté for 30 seconds. Add the tofu and sauté for another 30 seconds. Remove from the heat and transfer the mixture to a food processor.
- Add the remaining ingredients and process until you have a spreadable mixture. If the mixture seems too dry, add a teaspoon of milk or water. If the mixture seems a little wet, add some more grated cheese. Serve on toast or as a spread for salad and burger sandwiches, or use as a dip for your favorite crackers.
