Excellent picnic fare, this salad is simple, quick, and satisfying. The kids will love it!
Serves 8. Total time 40 minutes.
Prep time 10 minutes.
Cooking time 30 minutes.
1/2 cOnion or green onion, finely diced
1Medium green bell pepper, diced
1 cLow-fat sour cream
1 cNon-fat yogurt
1/8 tspnMild chili powder or...
1/4 tspnCajun seasoning
1 tspnMexican seasoning
1 1/2 tspnSalt, or to taste
2 1/2 cCooked red beans
2Large firm tomatoes, chopped
1Large head of lettuce, chopped into bite-size pieces
14 ozPackage of corn chips, crushed into bite-size pieces
- In a large bowl, mix the first 8 ingredients together. Add the beans and tomatoes and toss gently to combine. Chill until ready to serve.
- Just before serving, toss the bean mixture with the chopped lettuce and crushed corn chips. Serve immediately.
