Description
Excellent picnic fare, this salad is simple, quick, and satisfying. The kids will love it!

Ingredients
1⁄2 c
Onion or green onion, finely diced 1
Medium green bell pepper, diced 1 c
low-fat sour cream 1 c
Non-fat yogurt 1⁄4 c
Ketchup 1⁄8 tspn
Mild chili powder or... 1⁄4 tspn
Cajun seasoning 1 tspn
Mexican seasoning 1 1⁄2 tspn
salt, or to taste 2 1⁄2 c
Cooked red beans 2
Large firm tomatoes, chopped 1
Large head of lettuce, chopped into bite-size pieces 14 oz
Package of corn chips, crushed into bite-size piecesInstructions
- In a large bowl, mix the first 8 ingredients together. Add the beans and tomatoes and toss gently to combine. Chill until ready to serve.
- Just before serving, toss the bean mixture with the chopped lettuce and crushed corn chips. Serve immediately.
