Description
This mildly spiced paté is a wonderful spread that the whole family will enjoy.
Ingredients
1 tspn
Butter 2 Tbsp
Onion, minced 1⁄4 c
Tomato, chopped 12 oz
Firm silken tofu, mashed slightly 2 Tbsp
Fresh chives, chopped 1⁄2 tspn
Cajun seasoning or mild chili powder 1⁄4 tspn
salt, or to taste 1⁄4 tspn
Black pepper, or to taste 1⁄2 c
Cheese of choice, finely grated 1 Tbsp
Nutritional yeast 1 clv
Medium clove garlic 1 tspn
Milk or water if necessaryInstructions
- Melt the butter in a nonstick skillet on medium heat. Add the onion and tomato and sauté for 30 seconds. Add the tofu and sauté for another 30 seconds. Remove from the heat and transfer the mixture to a food processor.
- Add the remaining ingredients and process until you have a spreadable mixture. If the mixture seems too dry, add a teaspoon of milk or water. If the mixture seems a little wet, add some more grated cheese. Serve on toast or as a spread for salad and burger sandwiches, or use as a dip for your favorite crackers.
